Protein Balls

After a cheat clean protein ball recipe? Well you have come to the right place! This decadent, delicious Chocolate Peanut Butter Protein Ball recipe is a must try!

Ingredients

Protein Ball Base

2 Cups of Medjool Dates - pitted & packed

2 TBSP Peanut Butter

1/2 Tsp Vanilla Extract

1/4 Tsp fine Sea Salt

1 Scoop of Protein - Chocolate preferably (a Casein is recommended for a thicker mixture, otherwise any is fine!)

1/4 Cup Cocao Nibs


Chocolate Coating

1 Cup of Unsweeted Dark Chocolate - finely chopped

1-1/2 TBSP of Organic Extra-Virgin Coconut Oil


Peanut Butter Drizzle

3 Tbsp of Peanut Butter

1 Tbsp of Organic Extra Virgin Coconut Oil

1/2 Tbsp of Maple Syrup (preferably an unsweetened kind)

How to Make

1. Place your date into a food process until mixture becomes smooth and creamy.

2. Add the Peanut Butter, Vanilla, Protein and sea salt into your date mixture - blend for 30 seconds. Add the cocao nibs - don't be too concerned about blending in, but just on distributing them through your mixture.

3. Place the mixture into the freezer for 30 minutes and allow it to set.

4. While waiting, line a baking tray with baking paper

5. When time is up, remove your mixture from the freezer. Onto your baking tray, scoop heaped tablespoons of the mixture into balls along your tray. The mixture should make about 16 balls. Once completed, transfer the tray into the freezer and allow the balls to set for a further 15 minutes.

6. In the mean time, combine the dark chocolate and cococut over a stove or in the microwave. If microwaving, cook for a minutue then take out and stir - repeat until smooth. If cooking over the stove, do so at a low heat - we don't want to burn the chocolate. Set aside.

7. Collect the tray from the freezer. Spoon over some chocolate mixture per ball. Transfer back to the freezer for another 15 minutes to set.

8. Like your chocolate mixture, it is now time to heat and combine the peanut butter, coconut oil and maple syrup.

9. Remove your tray from the freezer. Lightly drizzle the peanut butter based topping over the protein balls - serve and enjoy!!
